Water Spelt Challah

This is truly a family favorite
Ingredients:
5 lbs of Spelt Flour
2 1/2 lbs organic white spelt flour
2 1/2 lbs organic whole spelt flour
7 tsp Himalayan sea salt
1 1/4 cup organic Suger
4 packets active dry yeast
1 1/2 cup of avocado oil
4-5 cups warm water
sesame seeds and/or everything but the bagel spice to sprinkle on challah/bread.
Instructions:
Place yeast, 1 tbsp sugar and 1/2 cup warm water in a small bowl cover with cloth, set a side so it can activate.
In the mixer add all the dry ingredients and mix for a second.
After slowly add the oil, yeast mixture & water while mixing on low speed.
After dough is well mixed allow it to rise (cover the bowl with a cloth) for at least an hour. When your dough is ready for shaping. You can braid the dough or make it into rolls...once you complete shaping the dough, let it rise for an additional hour.
After the rising is complete brush some avocado oil on the challah and sprinkle with sesame seeds or everything but the bagel spice.
Bake in the Oven on 350°. Bigger breaded challah needs approximately 50 min to bake, smaller rolls need about 30 minutes depending on your oven so keep an eye on it.
Health benefits of spelt flour:
Spelt is easier to digest then wheat the gluten in spelt has a different molecular make-up than the gluten in modern wheat.
It is more fragile and more water soluble, which makes it easier to digest. Spelt is also higher in fiber than wheat, and the extra fiber aids in the digestion of the gluten.
In addition Spelt flour is Higher in protein, fiber and complex carbs than many modern wheat grains and slightly lower in gluten, spelt is an excellent source of essential micronutrients, from copper, iron and manganese, to potassium, zinc and B vitamins.
